Job Title: Head Butcher

This role requires a highly skilled and experienced individual to oversee the daily operations of the Butcher Shop, ensuring efficient service delivery and maintaining high standards of quality.

Responsibilities:
  • Operational Management: Supervise the smooth day-to-day operation of the Butcher Shop, adhering to company policies and procedures.
  • Team Leadership: Direct, coach, support, supervise, and evaluate direct reports to ensure optimal performance.
  • Product Preparation: Responsible for thawing, butchering, and preparing all meats and poultry for daily menus.
  • Sanitation and Compliance: Ensure adherence to United States Public Health Rules and Regulations, conducting regular inspections and audits as required.
  • Maintenance and Organization: Oversee the cleaning of the Butcher Shop and thawing rooms, implementing effective methods to minimize equipment damage and maintain a safe working environment.
  • Inspections and Audits: Prepare the Butcher Shop and thawing rooms for announced or unannounced USPH inspections, ensuring compliance with regulations.
  • Inventory Management: Manage the storage of received meats and poultry in freezers on loading days, requisitioning necessary items for thawing rooms according to the Executive Chef's schedule.
  • Quality Control: Monitor product yields and portions, ensuring adherence to the Butcher Manual provided by the corporate office and effectively utilizing or disposing of trimmings.
  • Reporting and Record-Keeping: Complete Daily Butcher Recaps as required by the Executive Chef, collaborating with the Inventory Manager to conduct inventory checks of meat and poultry storage rooms.
  • Punctuality and Attire: Ensure that Butcher Shop personnel arrive on time, wear proper uniforms, and maintain personal appearance and hygiene according to company policy.
Requirements:
  • Culinary Experience: Minimum two years' experience as a Head Butcher in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
  • Culinary Education: Culinary school degree required.
  • Leadership Skills: Strong management skills in a multicultural and dynamic environment, with ability to communicate effectively, problem-solve, make decisions, and build strong interpersonal relationships.
  • Customer Service: Superior customer service, teambuilding, and conflict resolution skills.
  • Computer Literacy: Intermediate computer software skills required.
  • Accounting Knowledge: Basic understanding of accounting principles such as numbering flow, debits/credits, adjusting entries, and corrections.
