Job Title: Lead Culinary Professional

Key Responsibilities:

  • Supervises and evaluates all direct reports to ensure exceptional performance and efficiency.
  • Maintains thorough knowledge of culinary techniques, ingredients, and presentation styles.
  • Prepares company recipes by adhering to quality standards and consistency in taste according to corporate guidelines.
  • Effectively completes tasks and manages workload to meet deadlines.
  • Works efficiently across various kitchen sections.
  • Coordinates team members assigned to their section, assigns and delegates tasks accordingly.
  • Reviews recipes daily and maintains accurate recipe folders.
  • Follows through on requests from supervisors or managers within the area of responsibility.
  • Monitors production levels and recommends ideas for improvements and cost control.
  • Prepares electronic food requisitions needed for section production and counterchecks deliveries for accuracy.
  • Reports discrepancies to immediate supervisors.
  • Oversees main kitchen sections and entire food production process.
  • Maintains high Public Health standards and expectations (US, Anvisa, Shipsan, Canadian, Australian etc.) within their section.
  • Ensures correct HACCP program implementation.
  • Prepares areas for announced or unannounced United States Public Health type inspections.
  • Reports for duty at assigned times, follows supervisor instructions, and ensures personal appearance, uniform, and hygiene adhere to company rules and regulations.

Financial Management:

  • Responsible for cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment.
  • Identifies potential expense reductions through effective cost control.
  • Analyzes operational problems and establishes controls to optimize performance.
  • Reviews timesheets and forwards them to the Executive Chef for approval.
  • Prepares various reports and letters utilizing personal computer system and equipment.
  • Ensures items are requisitioned in correct quantities, within acceptable timeframes, and in accordance with established control procedures.
  • Conducts workstation spot checks to minimize deterioration and waste.

Motivational Leadership:

  • Monitors and manages assigned workstation functions.
  • Assigns duties and responsibilities to staff effectively.
  • Evaluates staff and work procedures to ensure quality standards and service are met.
  • Recommends personnel actions such as new hire requests and discharges based on performance.
  • Inspects workstations, work areas, equipment, etc. to ensure efficient service and conformance to standards.
