
Senior Culinary Operations Manager

Job Summary:
As a highly skilled Culinary Team Leader, you will be responsible for overseeing the daily operations of our kitchen, ensuring seamless execution and delivery of high-quality dishes.
Key Responsibilities:
- Directs, coaches, and evaluates direct reports to achieve exceptional results.
- Maintains thorough knowledge of culinary terms, ingredients, and recipes.
- Reviews and prepares company recipes according to strict quality and consistency standards.
- Works efficiently and productively in any kitchen section, prioritizing tasks to meet deadlines.
- Covers team members assigned to their section, delegates tasks, and undertakes recipe reviews daily to ensure accuracy.
- Ensures compliance with Public Health standards, maintaining a clean and safe work environment.
- Maintains the HACCP program correctly, preventing foodborne illnesses and maintaining a healthy kitchen.
- Prepares for announced or unannounced inspections, ensuring all necessary documentation is up-to-date and accessible.
- Reports for duty at assigned times, adheres to supervisor's instructions, and maintains personal appearance, uniform, and hygiene meeting company rules.
Financial Responsibilities:
- Effectively manages costs through proper use, handling, and maintenance of records, supplies, and equipment.
- Identifies expense reductions through cost control, analyzing operational problems and implementing solutions.
- Reviews timesheets and forwards them to the Executive Chef for approval, ensuring accurate payroll processing.
- Requisitions items in correct quantities within acceptable timeframes and according to established control procedures.
Motivational Responsibilities:
- Monitors workstation functions and staff assignments, ensuring efficient service and conformance to standards.
- Evaluates staff and work procedures to ensure quality standards and service are met, making recommendations for improvement.
- Inspects workstations, work areas, and equipment to ensure efficient service and conformance to standards, identifying areas for improvement.
Requirements:
- 5+ years of experience in a senior culinary role.
- Demonstrated leadership skills and ability to motivate team members.
- Excellent communication and problem-solving skills.
- Ability to work effectively in a fast-paced kitchen environment.
- Knowledge of Public Health regulations and HACCP principles.
