Executive Food Operations Manager

About the Role

The Executive Food Operations Manager is responsible for overseeing the preparation and presentation of food items to meet customer expectations and company standards. This includes ensuring the efficient and profitable operation of the facility, maintaining high standards of safety and hygiene, and fostering a culture of excellence and inclusivity.

  • Safety and Hygiene:
  • Ensure that safety and hygiene policies are strictly followed at all times.
  • Control the quantity and quality of ingredients and ensure that all items are received as per specifications.
  • Maintain records of all hygiene-related procedures, initiatives, and incidents.
  • Coordinate with QMHSE and H&FS teams to implement policies and processes.
  • Report incidents pertaining to QMHSE and H&FS in a timely manner.
  • Operational ownership of QMHSE and H&FS processes.
  • Communicate hazards to concerned departments in a timely manner.

Food Operation:

  • Ensure service deliveries are carried out according to client terms and conditions.
  • Manage menu recipes rotation for breakfast, lunch, snacks, dinner, and special events.
  • Develop new menus, upgrade old menus, and create special event menus.
  • Taste food before service begins.
  • Plan pre-preparation areas to process items according to recipes.
  • Maintain standards of quality, cost, presentation, and flavor of foods.

Organic Growth and Profitability:

  • Ensure organic growth of sales and sites by developing service excellence, retail offers, and value-added offers.
  • Sustain and build site profitability through timely analysis of reports and providing solutions to discrepancies.

Cash and Debtors Management:

  • Accurately control, handover, and deposit cash.
  • Maintain specified cash control documents.
  • Raise and deliver invoices to clients as per schedule.

People Management and Training:

  • Manage on-site team including cooks, MPWs, stewards, cashiers, and stores assistants.
  • Implement HR processes and staff welfare activities.

Communication and Client Retention:

  • Stay in close communication with clients regarding services, additional business, new initiatives, and hygiene.
  • Persistently retain 100% client satisfaction.

Wastage Control and Cost Management:

  • Maintain daily leftover records.
  • Plan production based on data.
  • Minimize wastage and recycle excess ingredients in accordance with highest hygiene standards.

Legal Compliances:

  • Coordinate with HR, QMHSE, and Legal departments to ensure legal compliances are met.

Systems Implementation and Process Management:

  • Implement and follow company policy.
  • Document and display work processes.

Procurement and Inventory Management:

  • Monitor daily raw material indent.

Qualifications:

  • IHM pass-out with 10 years of work experience.
