Job Opportunity: Executive Chef

We are seeking a highly skilled and experienced Executive Chef to lead our culinary team. Your primary responsibility will be to direct, coach, and supervise all direct reports, ensuring they have the necessary knowledge and skills to excel in their roles.

Main Responsibilities:
  • Direct and evaluate direct reports, providing guidance and support as needed.
  • Maintain excellent food knowledge and understanding of culinary terms.
  • Read, understand, and follow company recipes, preparing high-quality dishes according to corporate instructions.
  • Work efficiently and productively, completing tasks with minimal supervision.
  • Coordinate and supervise team members, assigning and delegating tasks as needed.
  • Review recipes daily, maintaining recipe folders in immaculate condition.
  • Follow through on requests from supervisors or managers, including show plates, food samples, and random tastings.
  • Control production levels and recommend improvements for better cost control.
  • Prepare electronic food requisitions, counterchecking deliveries for accuracy.
  • Oversee main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and entire food production.
  • Ensure Public Health standards are followed according to company expectations.
  • Carry out the HACCP program correctly.
  • Maintain assigned areas for inspections.
  • Report for duty at assigned times, following supervisor instructions and adhering to company rules.
Required Skills and Qualifications:
  • A minimum of 5 years' experience in an upscale hotel, resort, cruise ship, or convention banqueting service.
  • At least 2 years as Chef Tournant, preferably with shipboard experience.
  • Culinary school degree required.
  • Strong management, communication, problem-solving, decision-making, and interpersonal skills.
  • Superior customer service, teambuilding, and conflict resolution skills.
  • Knowledge of personalized services, quality service standards, and guest satisfaction evaluation techniques.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
  • Intermediate computer software skills required.
  • Understanding of basic accounting principles.
  • Ability to write reports and business correspondence.
