
Senior Culinary Operations Manager

Role Summary:
- A senior culinary professional, the Kitchen Supervisor is responsible for overseeing kitchen operations to ensure efficient food production and exceptional quality.
Key Responsibilities:
- Directs, coaches, supports, supervises, and evaluates all direct reports in the kitchen team to ensure seamless operations.
- Maintains an excellent understanding of culinary terms to ensure consistency in taste and quality.
- Coordinates and supervises team members assigned to their section, assigning tasks accordingly and ensuring adherence to company standards.
- Responsible for reviewing recipes daily, maintaining accurate records, and following guidelines.
- Ensures compliance with health regulations and maintains accurate records for inspections.
- Monitors and controls production levels, recommending improvements and cost-saving measures.
- Prepares daily requisitions, counterchecks deliveries, and reports discrepancies to the supervisor.
- Oversees main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and ensures adherence to standards.
Financial Management:
- Responsible for cost control through proper use and maintenance of records, reports, supplies, and equipment.
- Identifies potential expense reductions through cost analysis and operational problem-solving.
- Reviews timesheets, forwards them to the executive chef for approval, and prepares various reports using personal computer systems.
Leadership and Performance:
- Monitors and manages workstation functions, assigns duties, and evaluates staff performance to ensure quality standards are met.
- Makes recommendations regarding personnel actions, such as new hires and discharges, to ensure adequate staffing.
- Inspects workstations, work areas, equipment, and ensures efficient service and conformance to standards.
Qualifications and Education:
- A minimum of 8 years' experience in a high-end hospitality environment, with at least 2 years as a Kitchen Supervisor.
- Culinary school degree required.
- Strong management skills in multicultural and dynamic environments, with excellent communication, problem-solving, decision-making, and interpersonal skills.
