Job Title: Pastry Production Specialist

Key Responsibilities:

  • Operate the bakery shop efficiently, adhering to company policies.
  • Lead bread production, quality control, and presentation for daily menus.
  • Assist in forecasting production needs and recording leftovers to minimize waste.
  • Contribute to setting up the bread display in various buffets.
  • Maintain comprehensive knowledge of United States Public Health rules and regulations.
  • Clean the bakery shop according to the Executive Chef's schedule, minimizing equipment damage.
  • Prepare the bakery for USPH inspections.
  • Coordinate with main stores to transport necessary items to the bakery.
  • Ensure recipes and yields meet company standards.
  • Support CDP Bakers with daily consumption reports.
  • Provide assistance and training to colleagues as required.
  • Attend meetings, training sessions, and other work-related activities as scheduled.

Financial Management:

  • Manage budget, expenses, and revenue targets.
  • Optimize resource allocation to contain costs.

People Management:

  • Lead staff to achieve optimal performance.
  • Monitor workstation functions, assign duties, and evaluate staff performance.
  • Mentor staff, provide on-the-job training, and recommend personnel actions.

Qualifications:

  • Minimum three years' experience as a Baker in upscale hotels, resorts, cruise ships, or convention banqueting services.
  • Knowledge of proper cleaning techniques and equipment usage.
  • Completion of high school or basic education equivalency required.
