Lead a team of hospitality professionals to deliver exceptional food service and maintain high standards of safety and hygiene.

This role is responsible for overseeing the production and presentation of food items, ensuring customer expectations are met while maintaining efficiency and profitability of operations.

  • Develop and implement policies and procedures to ensure strict adherence to safety and hygiene protocols.
  • Control the quality and quantity of ingredients, training staff on receiving area procedures.
  • Maintain accurate records of hygiene-related procedures, initiatives, and incidents.
  • Collaborate with QMHSE and H&FS teams to implement policy and process.
  • Ensure timely reporting of incidents related to QMHSE and H&FS.
  • Operational ownership of all QMHSE and H&FS processes.

Key Responsibilities:

  • Food Operations: Ensure all service deliveries meet terms and conditions agreed upon with clients.
  • Manage menu recipes rotation for breakfast, lunch, snacks, dinner, and special events.
  • Initiate development of new menus, upgrade old menus, and special event menus.
  • Taste food before service begins.
  • Develop new ideas for promotions, festivals, and special events.
  • Plan pre-preparation areas to process items according to recipes.
  • Consistently maintain standards of quality, cost, presentation, and flavor of foods.

Organic Growth and Profitability:

  • Ensure organic growth of sales and sites by developing and promoting service excellence, retail offers, and value-added offers.
  • Sustain and build site profitability through timely analysis of reports and provide solutions to counter discrepancies.

Cash and Debtors Management:

  • Responsible for accurate control, handover, and deposition of cash; maintain accurately all specified cash control documents.
  • Ensure all invoices are raised and delivered to clients as per schedule.

People Management and Training:

  • Manage on-site team including cooks, MPWs, stewards, cashiers, stores assistants, etc.
  • Implement and carry out HR processes and staff welfare activities.

Communication and Client Retention:

  • Stay in close communication with clients for all issues regarding services, additional business, new initiatives, and hygiene.
  • Prepare documents of the same.
  • Ensure 100% client retention.
