Key Responsibilities:

  • Ensure seamless and efficient operation of the pastry shop and production, adhering to company policies and procedures.
  • Lead the production, quality, and presentation of the pastry and dessert assortment, consistently meeting menu requirements.
  • Collaborate with the CDP Pastry in preparing production forecasts and managing inventory to minimize waste and maintain optimal food costs.
  • Assist in setting up the pastry display in various buffets, showcasing your creativity and attention to detail.
  • Demonstrate expertise in United States Public Health rules and regulations, ensuring compliance and maintaining a clean and safe working environment.
  • Maintain the cleaning schedule for the Pastry Shop, implementing effective methods to prevent equipment damage and ensure smooth operations.
  • Prioritize preparation for announced or unannounced USPH inspections, guaranteeing the pastry galley meets all regulatory standards.
  • Requisition and transport necessary items from main stores to the pastry shop as assigned, streamlining logistics and enhancing productivity.
  • Verify recipes and yields meet company standards, promoting consistency and excellence in every aspect of pastry production.
  • Support the CDP Pastry in completing daily pastry consumption reports, providing valuable insights for continuous improvement.
  • Stay informed about and adhere to shipboard standard operating procedures, offering assistance to guests and crew members as needed.
  • Participate in meetings, training activities, courses, and other work-related events, fostering growth and professional development.
  • Perform additional duties as required, embracing flexibility and adaptability in a fast-paced environment.

Qualifications and Education:

  • A minimum of three years' experience as a Pastry Cook in upscale settings (hotel, resort, cruise ship, or convention banqueting service), with preference given to those with shipboard experience.
  • Demonstrated knowledge of proper cleaning techniques, equipment use, and sanitation practices.
  • Completion of high school or basic education equivalency requirement.
