Job Overview:
Serving as a culinary leader onboard, you will oversee and coordinate activities of food preparation teams.
Key Responsibilities:
- Ensure all duties and responsibilities are performed in accordance with industry standards, policies, and procedures.
- Supervise and assign tasks to team members in various food service venues and galleys throughout the ship.
- Prepare and present high-quality food items according to established recipe standards.
- Train and monitor junior staff for proper service delivery.
- Conduct inventory, determine daily food requirements, and prepare requisitions for approval.
- Maintain HACCP and onboard sanitation, hygiene standards at all times.
- Operate equipment according to standard operating procedures and report any issues directly.
- Collaborate effectively with galley personnel and adjust thermostat controls to regulate temperature.
- Add flavor to dishes during mixing or cooking to cater to diverse guest preferences.
- Control, store, and dispose of overproduction food items according to industry standards.
Qualifications:
- 4-6 years of experience in upscale hotels, resorts, cruise ships, or convention banqueting services.
- Prior experience as a culinary team leader is highly advantageous.
- Culinary school degree required.
- Strong leadership, communication, problem-solving, decision-making, and interpersonal skills.
- Superior customer service, teamwork, and conflict resolution skills.
- Knowledge of principles and processes for providing personalized services.
- Intermediate computer software skills required.
- Fundamental accounting knowledge and ability to write reports.
