As a leader in the culinary world, we are seeking a highly skilled Sous Chef to join our team.

The primary objective of this role is to maintain an efficient operation by continually analyzing quality and cost of food production.

  • Maintain set standards and monitor time management effectively.
  • Provide ongoing training and ensure that established corporate standards are followed.
  • Ensure safe, high-quality food products and deliver exceptional guest satisfaction.
  • Develop and comply with systems, procedures, rules, objectives, and timescales set by the organization, taking a disciplined approach when undertaking tasks.
  • Work within a technical/specialized area of expertise to improve the quality of service and product provided.
  • Adopt an accommodating and helpful demeanor.
  • Accept objectives set by others and work within agreed parameters to ensure tasks are completed.
  • Mentor, counsel, coach, and support subordinates to boost morale and personal esteem.
  • Maintain a high level of crew morale within the administration department, ensuring all crew members are treated fairly and with respect, and the team works in a positive atmosphere.
  • Ensure full adherence to menus, recipes, methods, and operational specifics provided by the company.
  • Seek direction and authority from others when appropriate.
  • Achieve set goals in a non-assertive and efficient manner.
  • Conduct daily food tastings.
  • Correct discrepancies (quality, taste, appearance) immediately.
  • Monitor and assist Section Heads to prepare the daily electronic food requisitions according to forecasted figures.
  • Monitor the Dinner Service Line in assigned locations to ensure smooth and efficient service, presentation, and final plating.
  • Monitor production and preparation levels using the Culinary Checklist.
  • Maintain and ensure that Public Health regulations (US, Anvisa, Shipsan, Canadian, Australian, etc.) are followed at all times.
Qualifications
  • Advanced culinary skills, leadership, and experience.
  • Minimum 8 years of experience in the profession (Quality Hotels and Restaurants).
  • Minimum 2 years of experience in a management role in a well-recognized luxury hospitality establishment or upscale cruise line.
  • Fluent in written and spoken English.
  • Effective communication with senior management.
  • Ability to lead and make decisions.
  • Good administrative skills.
  • Experience in coaching subordinates.
  • Cost and quality consciousness.
  • Flexibility in scheduling and ability to adapt to changing circumstances.
  • Ability to work with international team members.
  • Performing duties under pressure (time constraints).
