Job Description

The Sous Chef plays a crucial role in maintaining an efficient operation by analyzing quality and cost of food production. This involves ensuring that all culinary processes are conducted to the highest standards, resulting in exceptional guest satisfaction.

  • Maintain set standards and monitor time management to ensure seamless operations.
  • Provide ongoing training to staff to ensure company standards are upheld.
  • Ensure safe, quality food products through meticulous monitoring of preparation and presentation.
  • Develop and adhere to systems, procedures, rules, objectives, and timescales set by the organization.
  • Improve the quality of service and product provided through technical expertise.
  • Maintain a positive and accommodating manner towards colleagues and guests.
  • Work within agreed parameters to achieve tasks and support subordinates effectively.
  • Mentor and coach staff to boost morale and personal esteem.
  • Ensure fair treatment and a positive atmosphere among team members.
  • Adhere to menus, recipes, methods, and operational specifics provided by the organization.
  • Seek direction when necessary and take ownership of decisions made.
  • Achieve goals efficiently and effectively while prioritizing quality and safety.
  • Conduct daily food tastings to monitor quality and address discrepancies immediately.
  • Monitor and assist Section Heads with daily electronic food requisitions to optimize efficiency.
  • Ensure smooth and efficient service, presentation, and final plating during dinner service.
  • Use the Culinary Checklist to monitor production and preparation levels, ensuring optimal output.
  • Maintain Public Health regulations at all times to guarantee a safe working environment.
Qualifications and Required Skills
  • Advanced culinary skills, leadership, and experience.
  • Minimum 8 years in the profession (Quality Hotels and Restaurants).
  • Minimum 2 years of experience in a management role in a well-recognized luxury hospitality establishment or upscale cruise line.
  • Fluent in written and spoken English.
  • Effective communication with senior management.
  • Ability to lead and make decisions.
  • Good administrative skills.
  • Experience in coaching subordinates.
  • Cost and quality conscious.
  • Flexible with scheduled work hours.
  • Work with international team members.
  • Perform duties under pressure.
Preferred Skills
  • Cruise Ship Experience or 5 star Hotel.
  • Fluency in additional language(s).
