Job Summary

We are seeking a highly skilled Executive Pastry Chef to join our team at AccorHotel. As a key member of our culinary team, you will be responsible for ensuring the highest quality standards in our pastry department.

Key Responsibilities

  • Quality Control: Monitor food quality and consistency to ensure that the food presented to our guests meets the highest standards.
  • Product Identification: Perform yield testing and ensure that rotation and labeling adhere to written guidelines for food product specifications.
  • Inventory Management: Monitor dry and general stores daily to ensure that all perishable produce delivered to the hotel follows written guidelines for product specifications.
  • Kitchen Sanitation: Conduct weekly kitchen walkthroughs and liaise with the Executive Steward to ensure that kitchen sanitation and engineering maintenance standards are met.
  • Culinary Expertise: Perform hands-on demonstrations of international cuisine through food tasting as required.
  • Waste Reduction: Monitor all food items ordered to ensure minimal wastage and proper product utilization is carried out at all times.
  • Kitchen Security: Ensure that no unauthorized personnel enter the kitchen at any point in time and that those who enter follow guidelines set forth by the occupational health department.
  • Equipment Maintenance: Ensure that all equipment and perishable items are stored in their designated place and done in the most hygienic manner.
  • Collaboration: Work closely with the receiving department and storeroom to ensure that received goods are of standard quality and according to hotel specifications.
  • Menu Planning: Update recipe costing and menu planning for promotions.
