Sous Chef Role

About the Position:

This role involves managing an efficient operation by continuously evaluating quality and cost of food production.

Responsibilities:

  • Maintain set standards and monitor time management for optimal efficiency.
  • Provide ongoing training to subordinates, ensuring adherence to established guidelines.
  • Ensure safe, high-quality food products and deliver exceptional customer satisfaction through vigilant monitoring.
  • Develop and implement organizational systems, procedures, rules, objectives, and timelines to achieve success.
  • Work within a technical/specialized area of expertise to enhance the quality of service and product provided.
  • Acknowledge and foster teamwork by adopting an accommodating and helpful attitude.
  • Accept goals set by others and work within agreed parameters to ensure tasks are completed.
  • Offer guidance, mentorship, and support to subordinates to boost morale and personal esteem.
  • Maintain a high level of crew morale within the administrative department, ensuring fair treatment and a positive atmosphere.
  • Adhere strictly to menus, recipes, methods, and operational specifics provided by the organization.
  • Pursue direction and authority from others when necessary.
  • Achieve set objectives in a non-assertive and efficient manner.
  • Conduct regular food tastings and address discrepancies immediately.
  • Monitor and assist Section Heads to prepare electronic food requisitions based on forecasted figures.
  • Supervise the dinner service line in assigned areas to ensure smooth and efficient service, presentation, and final plating.
  • Monitor production and preparation levels using the Culinary Checklist.
  • Ensure strict adherence to Public Health regulations at all times.

Qualifications:

  • Demonstrate advanced culinary skills, leadership capabilities, and relevant experience.
  • Show a minimum 8 years of professional experience (quality hotels and restaurants).
  • Possess a minimum 2 years of experience in a management role in a well-established luxury hospitality establishment or upscale cruise line.
  • Display fluency in written and spoken English.
  • Exhibit effective communication with senior management.
  • Demonstrate ability to lead and make informed decisions.
  • Show good administrative skills.
  • Evidence experience in coaching subordinates.
  • Display cost and quality awareness.
  • Demonstrate flexibility with scheduled work hours.
  • Show international team collaboration capabilities.
  • Demonstrate ability to perform duties under pressure.

Preferred Skills:

  • Cruise ship experience or 5-star hotel background.
  • Additional language proficiency.
