  • Leadership Skills: Demonstrates leadership skills to direct and coach kitchen staff.
  • Food Knowledge: Possesses excellent food knowledge and understands culinary terms.
  • Recipe Maintenance: Maintains recipe folders in pristine condition and undertakes daily reviews.
  • Production Control: Controls production levels and recommends improvements for better cost control.
  • Team Supervision: Coordinates and supervises team members assigned to their section.
  • Financial Acumen: Exercises financial acumen through proper handling and maintenance of records, reports, supplies, and equipment.
  • Expense Reductions: Identifies potential expense reductions through effective cost control.
  • Performance Monitoring: Monitors workstation functions and evaluates staff performance to ensure quality standards are met.
  • Staff Development: Observes and evaluates staff procedures to ensure service quality is maintained.
Qualifications and Experience:
  • Culinary Expertise: A minimum of 8 years in an upscale hotel, resort, cruise ship, or convention banqueting service with at least 2 years as a Chef de Partie (shipboard experience preferred).
  • Culinary Education: A culinary school degree is required.
