
Senior Culinary Professional

About this role:
We are seeking a Senior Culinary Professional to oversee the efficient operation of our kitchen. This individual will analyze quality and cost of food production, ensuring we maintain the highest standards in the industry.
Key Responsibilities:- Maintain set standards and monitor time management effectively.
- Provide ongoing training and ensure that company standards are consistently followed.
- Ensure safe, quality food products and complete guest satisfaction.
- Develop and comply with systems, procedures, rules, objectives, and timescales set by the organization.
- Work within a technical/specialized area of expertise to improve the quality of service and product provided.
- Adopt an accommodating and helpful manner at all times.
- Accept objectives set by others and work within agreed parameters to ensure tasks are completed efficiently.
- Mentor, counsel, coach, and support subordinates to boost morale and personal esteem.
- Maintain high crew morale within the administration department, ensuring fair treatment of all crew members and a positive team atmosphere.
- Ensure full adherence to menus, recipes, methods, and operational specifics provided by the organization.
- Seek direction and authority from others when necessary.
- Achieve set goals in a non-assertive and efficient manner.
- Conduct regular food tastings to ensure quality control.
- Correct discrepancies (quality, taste, appearance) immediately and take corrective action.
- Monitor and assist Section Heads in preparing daily electronic food requisitions according to forecasted figures.
- Monitor the dinner service line to ensure smooth and efficient service, presentation, and final plating.
- Monitor production and preparation levels using the Culinary Checklist.
- Maintain and ensure that Public Health regulations are followed at all times.
Requirements:
- Advanced culinary skills, leadership, and experience.
- Minimum of 8 years in the profession (Quality Hotels and Restaurants).
- Minimum of 2 years of experience in a management role in a well-recognized luxury hospitality establishment or upscale cruise line.
- Fluent in written and spoken English.
- Effective communication with senior management.
- Ability to lead and make decisions.
- Good administrative skills.
- Experience in coaching subordinates.
- Cost and quality conscious.
- Flexible work schedule, yet able to adapt to changing circumstances.
- Work effectively with international team members.
- Perform assigned duties under pressure (time constraints).
Preferred Skills:
- Cruise Ship Experience or 5-star Hotel background.
- Fluency in additional languages.
