Job Description

Key Responsibilities:

  • Ensure all equipment is thoroughly checked prior to service to guarantee seamless operations.
  • Distribute work schedules to relevant sections of the kitchen and delegate tasks effectively to meet deadlines set by senior management.
  • Collaborate with outlet managers to facilitate smooth service delivery and maintain high standards.
  • Monitor food presentation to ensure it meets company standards and guidelines as outlined in prescribed recipes.
  • Record and update recipes as necessary to maintain a comprehensive kitchen manual.
  • Oversee front-of-house food setups to ensure they adhere to guidelines set by the Executive Chef.
  • Organize rosters for casual, agency, and section staff according to guidelines set by the Executive Chef.
  • Foster a team-oriented environment to achieve department and ACCOR objectives.
  • Monitor food quantity and quality for assigned sections to ensure compliance with ACCOR standards.
  • Evaluate systems and procedures to drive continuous improvement in product and service delivery.
  • Ensure HACCP procedures are followed and accurate records are maintained at all times.
  • Coordinate training with the training manager, ensuring new team members receive proper departmental orientation, task explanations, and empowerment with new skills, with a focus on multi-skilling where possible. Maintain relevant documentation for training needs and completion.
  • Conduct regular team member performance evaluations, following standard procedures laid down by management. Motivate and encourage slow learners to enhance task delivery efficiency. Conduct individual appraisals, understanding the need for motivation, growth, and retention of team members.
