Director of Food and Beverage
An exceptional leader sought to head our Food and Beverage operations.
Key Responsibilities
- Align Food and Beverage activities with Corporate Strategy, implementing Hotel Actions as necessary.
- Oversee Departmental Operations Manuals preparation and updates in the Food and Beverage Division.
- Conduct regular divisional communications meetings and ensure departmental briefings and meetings are effective.
- Represent the Food and Beverage function on the hotel's Executive Committee.
- Ensure exceptional guest service at all times, delivering the brand promise.
- Handle guest and internal customer complaints and inquiries in a courteous and efficient manner.
- Maintain positive guest and colleague interactions with good working relationships.
- Maximise employee productivity through multi-skilling, multi-tasking, and flexible scheduling.
- Ensure each profit centre operates in line with maximising profit while delivering the brand promise.
- Coordinate the Annual Business Plan for Food and Beverage, analysing business performance strategically.
- Manage costs proactively based on key performance indicators, working through Heads of Department as necessary.
- Ensure adherence to financial record keeping, money handling, and licensing regulations.
- Participate in weekly yield and revenue management meetings, overseeing pricing structures to maximise yield and profits.
- Prepare, utilise, and update an Annual Marketing Plan, evaluating local, national, and international market trends.
- Encourage Heads of Department to look for Marketing and Public Relations opportunities to increase awareness and business.
- Ensure all company minimum brand standards have been implemented, monitoring all operations during peak business periods.
- Provide feedback on the results of the Consumer Audit and ensure relevant changes are implemented.
- Work closely with other Executive Committee members, focusing on the overall success of the hotel and guest satisfaction.
- Ensure Food and Beverage employees work in a supportive and flexible manner with other departments.
- Ensure all employees are up to date with the availability of seasonal and new products on the market.
- Taste and monitor food and beverage products served throughout the operation, providing feedback where necessary.
- Oversee and assist in the recruitment and selection of all Food and Beverage employees, ensuring Heads of Department follow hotel guidelines.
- Maximise the effectiveness of Heads of Department by developing their skills and abilities through training, coaching, and/or mentoring.
- Conduct annual Performance Development Discussions with Heads of Department and support them in their professional development goals.
- Ensure all employees have a complete understanding of and adhere to employee rules and regulations.
- Ensure employees follow all hotel, company, and local rules, policies, and regulations relating to fire and hazard safety, and security.
- Feedback the results of the Employee Engage Survey and ensure relevant changes are implemented.
Requirements
- University degree or diploma in Hospitality or Tourism management.
- Minimum 2 years work experience as Director of F&B, or Assistant Director of F&B in a large property.
- Good operational, administrative, and interpersonal skills are a must.
