Job Title: Head Pastry Chef and Trainer
Job Summary:
The Head Pastry Chef and Trainer will lead the pastry and bakery team to maintain the highest standards of quality and excellence in our training programs. This role requires a highly skilled and experienced pastry chef who can provide expert guidance and mentorship to team members and students.
Responsibilities:
- Leadership and Employee Development:
- Provide coaching, mentorship, motivation, and direction to all pastry department colleagues.
- Develop colleagues in all areas of baking and leadership skills.
- Ensure every employee is working effectively and efficiently, improving morale and fostering positive employee relations.
- Production Management:
- Lead and manage the quality and quantity of items produced by the pastry department.
- Coordinate production to meet the demands of banquet and restaurant functions.
- Supervise and manage pastry department employees, ensuring adherence to standards and procedures.
- Financial Management:
- Advocate sound financial and business decision-making within the pastry department.
- Monitor weekly sales and adjust pre-production levels accordingly.
- Ensure all food products are ordered to par levels and make adjustments based on business volumes.
- Operational Excellence:
- Oversee all cooking operations, including methods of preparation, portion control, and food delivery timeliness.
- Monitor and maintain garnishing standards to enhance presentation.
- Open and close the pastry work area at scheduled times, ensuring full preparation for operation.
- Quality Assurance:
- Lead and manage the quality and quantity of the pastry department's output.
- Coordinate production to effectively handle customer demands.
- Supervise the preparation, quality, and quantity of all baked items to maintain high standards.
- Teaching and Training:
- Impart knowledge and expertise to students, ensuring they receive comprehensive training and guidance.
- Communicate effectively with team members and students, providing clear instructions and guidance.
- Foster an environment conducive to learning and skill development.
Requirements:
The ideal candidate will possess excellent leadership and communication skills, as well as a proven track record of success in the pastry and baking industry. A passion for teaching and mentoring is essential, as is the ability to maintain high standards of quality and excellence.
