We are looking for skilled and passionate Commi I & Commi II Tandoor Section professionals to join our culinary team. The ideal candidate should have strong expertise in tandoor cooking techniques, marination, and presentation, while maintaining the highest standards of quality, hygiene, and safety.

Key Responsibilities

Food Preparation & Cooking

  • Prepare and cook all tandoor-based dishes as per standard recipes.
  • Maintain correct cooking temperatures and timings for each item.
  • Ensure proper marination techniques and consistent flavors.

Quality & Presentation

  • Maintain consistency in taste, texture, and presentation of dishes.
  • Follow portion control guidelines to reduce wastage.
  • Ensure food is fresh, hot, and meets quality standards.

Tandoor Maintenance

  • Manage and monitor tandoor oven temperature throughout service hours.
  • Operate and maintain tandoor ovens, skewers, and tools safely.
  • Clean and maintain tandoor equipment and workstation after each shift.

Hygiene & Safety

  • Follow food safety, hygiene, and sanitation guidelines (HACCP standards).
  • Maintain personal cleanliness and proper kitchen attire.
  • Store raw and cooked items separately to prevent cross-contamination.

Team Support

  • Support other kitchen sections during peak hours as needed.
  • Attend daily briefings and follow instructions from senior chefs.

Qualifications & Experience

  • Minimum 2 - 3 years of professional kitchen experience, with at least 1 - 2 years in the Tandoor section.
  • Strong knowledge of traditional tandoor cooking techniques and recipes.
  • Ability to handle tandoor ovens and maintain consistent heat.
  • Good understanding of marination, seasoning, and portion control.
  • Familiarity with kitchen hygiene, food safety, and HACCP standards.
  • Ability to work under pressure in a fast-paced environment.
