Job Summary:
The Commis I – Tandoor Section is responsible for preparing, cooking, and presenting authentic tandoor dishes while maintaining the highest quality, hygiene, and consistency standards. The role demands expertise in handling the tandoor, marination, and Indian cuisine, ensuring guest satisfaction in line with the hotel's culinary standards.
Key Responsibilities:
- Prepare and cook a variety of Indian breads, kebabs, curries, and other tandoor-based dishes.
- Ensure all mise-en-place is prepared and stocked for service.
- Maintain consistency in taste, quality, and presentation as per standard recipes.
- Operate and maintain the tandoor oven safely and efficiently.
- Monitor portion and waste control to maintain food cost.
- Maintain high levels of cleanliness and hygiene in the tandoor section at all times.
- Assist the Chef de Partie / Sous Chef in menu planning, specials, and food festivals.
- Ensure compliance with HACCP and food safety standards.
- Guide and support Commis II & III in the section when required.
- Cooperate with other sections of the kitchen to ensure smooth operations.
- Report equipment maintenance issues promptly.
Requirements:
- Minimum 2–3 years of experience in the Tandoor section in a reputed 4/5-star hotel or fine-dining restaurant.
- Strong knowledge of Indian cuisine, marinades, spices, and cooking techniques.
- Ability to work under pressure in a fast-paced environment.
- Good communication and teamwork skills.
- Flexibility to work in shifts, weekends, and holidays.
- Culinary degree/diploma preferred but not mandatory if experience is strong.

- Knowledge of hygiene, safety, and food handling procedures.
