Key Responsibilities:

The **Commis Chef – Indian Curry Cuisine** will work as part of the kitchen team, focusing on the preparation and cooking of traditional Indian curries. This role involves learning and applying Indian cooking techniques, with a particular emphasis on curry-making. The Commis Chef will assist senior chefs in preparing ingredients, cooking a variety of curry-based dishes, ensuring food quality and consistency, and maintaining kitchen hygiene. This is an entry-level position with opportunities to learn and grow in Indian cuisine, especially curry-based dishes.

Key Responsibilities:

  1. Curry Preparation and Cooking:

* Follow established recipes to ensure consistency and quality in every dish.

* Work with a variety of curry bases, including tomato-based, cream-based, and yogurt-based gravies.

* Assist in making spice pastes, masalas (like garam masala), and curry powders from scratch, ensuring each dish has the authentic Indian flavor profile.

  1. Preparation of Ingredients:

* Wash, peel, chop, and prep vegetables, meats, and other ingredients required for curry dishes.

* Measure and prepare spices, herbs, and seasonings to create aromatic, balanced curry flavors.

* Assist in marinating meats (chicken, lamb, etc.) with spices and yogurt to enhance flavor for curry preparations.

  1. Cooking and Simmering Curries:

* Cook curry dishes by slow-simmering meats, vegetables, and legumes with aromatic spices and creating rich, flavorful gravies.

* Follow traditional techniques such as tempering spices in hot oil (tadka) or **bhuna** (frying spices and onions for deeper flavor).

* Ensure curries are cooked to the right texture and consistency.

  1. Maintaining Hygiene & Cleanliness:

* Ensure all kitchen stations, tools, and equipment are clean and sanitized.

* Follow food safety standards to prevent cross-contamination and maintain cleanliness in food preparation areas.

* Clean your workstation regularly to ensure a safe and organized environment.

  1. Stock and Ingredient Management:

* Assist in checking and managing inventory, ensuring fresh ingredients are available for curry preparations.

* Organize spices, herbs, and other curry-making ingredients, ensuring they are stored properly and easily accessible.

* Help in rotating stock to ensure ingredients are used within their freshness period.

  1. **Plating & Presentation:**

* Assist in garnishing and plating curry dishes according to the restaurant's standards, ensuring visual appeal and consistency.

* Ensure the portion sizes of curry dishes are appropriate and balanced with accompanying rice or bread.

  1. **Supporting the Kitchen Team:**

* Work closely with the senior chefs, line cooks, and other kitchen staff to ensure smooth and efficient service.

* Help during peak service times, ensuring that all curry dishes are prepared and delivered on time.

* Assist in other kitchen duties as needed, such as preparing side dishes or helping with prep work.

  1. **Learning and Development:**

* Continuously learn and improve cooking techniques related to Indian curry dishes.

* Gain hands-on experience with traditional methods like slow cooking, simmering, and using a tandoor.

* Stay updated on curry trends and explore regional variations of Indian curry dishes, from North Indian **dal** to South Indian **sambar**.

  1. **Adhering to Kitchen Standards:**

* Follow recipe instructions and portion control guidelines to maintain consistency in flavor, texture, and presentation.

* Maintain a high level of food quality and taste across all curry preparations.

* Ensure that all curries meet food safety standards and are prepared in a safe and hygienic environment.


**Skills & Qualifications:**

* **Experience**: Previous experience in a professional kitchen or culinary school training is preferred but not required.

* **Knowledge of Indian Cuisine**: Basic understanding of common curry spices (turmeric, cumin, coriander, garam masala, etc.) and cooking techniques.

* **Culinary Skills**: Basic knowledge of Indian curry cooking methods, such as slow simmering, using whole spices, and making curry bases.

* **Hygiene Standards**: Understanding of food safety, sanitation, and kitchen hygiene protocols.
