Position: Brand Chef

Location: Mumbai

CTC Range: Rs. 30 - Rs. 35 lacs per annum

SUMMARY:

The Brand Chef will be the culinary custodian of an Italian Cuisine based Fast Casual Restaurant Brand, responsible for product innovation, menu engineering, and maintaining uncompromising quality across all kitchens and production units. This role demands a hands-on leader with creative flair, deep technical knowledge, and the ability to build and inspire a world-class culinary team.

KEY RESPONSIBILITIES:

Culinary Leadership
: Develop, innovate, and standardize recipes with a focus on yield factors, food cost optimization, and menu engineering.

Cuisine Expertise
: Specialization in Continental & Authentic Italian cuisine, particularly Neapolitan pizza-making; added expertise in Pan-Asian, Indian, Mediterranean, and Mexican cuisines is a plus.

Operational Excellence
: Ensure streamlined processes across central kitchens, factories, and restaurant outlets — covering butchery, confectionery, bakery, and hot/cold sections.

Product Development:
Lead R&D initiatives for new products, ensuring scalable production while retaining authenticity and taste.

Quality & Compliance
: Uphold the highest standards of food safety, hygiene, and operational compliance.

Talent Development
: Mentor, train, and grow culinary talent across central production and customer-facing units.

Strategic Input
: Collaborate with promoters and senior management to align culinary strategy with the brand's vision.

REQUIREMENTS:

Minimum 12 years of experience across fine dining, casual dining, and fast-casual kitchens

International Experience will be a big plus

Proven expertise in Central Kitchens, Product Standardization, and Restaurant Kitchens

Strong knowledge of food science, menu analytics, and cost optimization

Experience in designing kitchen layouts and driving efficient workflows

Demonstrated leadership skills with a track record of building high-performance culinary teams
