We are a well-established Quick Service Restaurant (QSR) chain based in Bangalore, specialising in South Indian cuisine, particularly Andhra-style dishes. We are currently seeking a highly skilled and experienced Executive Chef to join our team. The Executive Chef will play a crucial role in the new product development process, overseeing training initiatives, and creating Standard Operating Procedures (SOPs) for our kitchen operations.
**Responsibilities**:
**New Product Development**:
- Collaborate with the management team to conceptualise and develop innovative South Indian dishes, particularly focusing on Andhra-style cuisine.
- Conduct research on current food trends, customer preferences, and regional flavours to create unique and appealing menu offerings.
- Experiment with ingredient combinations, flavours, and presentation techniques to create new dishes that align with our brand identity.
- Develop standardised recipes, ensuring consistency in taste, quality, and portion sizes across all our outlets.
- Conduct frequent taste tests and gather feedback from customers to refine and improve the new dishes.
**Training and Development**:
- Design and implement comprehensive training programs for kitchen staff, ensuring they are proficient in preparing and presenting Andhra style dishes.
- Conduct regular training sessions to educate the kitchen team on food safety, hygiene practices, and proper cooking techniques.
- Provide guidance and mentorship to junior chefs and kitchen staff, fostering a culture of continuous learning and development.
- Monitor the performance of kitchen staff, identify skill gaps, and provide constructive feedback to enhance their culinary skills.
**Standard Operating Procedures (SOPs)**:
- Develop and document detailed SOPs for all kitchen operations, including food preparation, cooking methods, portion control, and plating guidelines.
- Establish quality control measures to ensure adherence to SOPs, maintaining consistency and efficiency in food production.
- Regularly review and update SOPs to incorporate industry best practices and optimise kitchen operations.
- Conduct audits and inspections to ensure compliance with food safety and sanitation standards.
**Requirements**:
- Proven experience as an Executive Chef or similar role in a reputable restaurant or QSR chain, preferably with expertise in South Indian cuisine, particularly Andhra style dishes.
- In-depth knowledge of Andhra style flavours, ingredients, and cooking techniques.
- Strong creativity and ability to develop unique and innovative dishes while maintaining authenticity.
- Excellent leadership skills to effectively manage and inspire a team of kitchen staff.
- Exceptional organisational and time management abilities.
- Familiarity with food safety and hygiene regulations.
- Strong communication skills to collaborate with cross-functional teams.
- Flexibility to adapt to a fast-paced, dynamic environment.
