**Job Summary**:
The Sous Chef (Pastry & Bakery) will assist the Head Pastry Chef in the preparation, baking, and presentation of baked goods and desserts. This role involves daily production of pastry items, management of kitchen staff, quality control, and ensuring the highest culinary standards are maintained. The Sous Chef will also contribute to menu development and inventory management.
**Key Responsibilities**:1. Pastry & Bakery Preparation**:
- Assist in the production and baking of pastries, cakes, breads, and desserts as per the menu.
- Ensure all pastry and bakery products are prepared to the highest standards of quality and presentation.
- Experiment with new recipes and techniques to introduce new items to the menu.
**2. Team Leadership & Management**:
- Supervise and coordinate the activities of pastry and bakery staff.
- Provide training and mentorship to junior pastry chefs, apprentices, and other kitchen staff.
- Delegate tasks and ensure that all kitchen workstations are well organized and operated efficiently.
**3. Menu Development**:
- Collaborate with the Head Pastry Chef to develop new menu items and seasonal offerings.
- Contribute to creative ideas for desserts and baked goods to enhance the dining experience.
- Modify recipes to meet customer preferences or dietary restrictions (gluten-free, sugar-free, etc.).
**4. Quality Control & Hygiene**:
- Ensure the consistent quality and presentation of all pastry and bakery items.
- Conduct daily quality checks on ingredients and finished products.
- Maintain the highest standards of cleanliness and food safety in the kitchen in compliance with health and safety regulations.
**5. Inventory & Stock Management**:
- Monitor inventory levels for all bakery ingredients and supplies.
- Assist in ordering ingredients and managing stock levels to prevent shortages.
- Ensure proper storage of ingredients and rotation of stock to minimize waste.
**6. Kitchen Operations**:
- Assist the Head Pastry Chef in organizing kitchen workflow to ensure efficient production.
- Step in for the Head Pastry Chef during their absence and take charge of kitchen operations.
- Monitor the maintenance and functionality of all pastry kitchen equipment and report any issues.
**Skills & Qualifications**:
- **Culinary Education**: Diploma or degree in pastry arts, culinary arts, or a related field.
- **Experience**: Minimum of 3-5 years of experience in a professional pastry or bakery kitchen, with at least 1 year in a leadership or supervisory role.
- **Technical Skills**: Proficient in baking techniques, chocolate work, sugar art, and other pastry skills.
- **Creativity**: Ability to create visually appealing and innovative dessert and pastry designs.
- **Leadership Skills**: Strong leadership and communication skills to manage and motivate
Pay: ₹25,000.00 - ₹35,000.00 per month
**Experience**:
