**Job description - CDP** Being a Chef de Partie (CDP) you are responsible for overseeing and managing a specific section or station within the kitchen. Your team role involves food preparation, cooking, and maintaining high culinary standards. **Job Title: Chef de Partie (CDP)** **Job Summary**: The Chef de Partie plays an essential role in the kitchen brigade of our concern, responsible for managing a specific section and ensuring the preparation and production of high-quality dishes. The CDP collaborates with the culinary team to maintain food quality, safety, and efficiency. **Key Responsibilities**: 1. Food Preparation: - Oversee the preparation of ingredients and mise en place for your specific station or section. - Follow recipes and guidelines to ensure consistent food quality. - Execute precise measurements, cuts, and portions. 2. Cooking and Assembly: - Lead and participate in cooking and assembling dishes for your station. - Operate kitchen equipment proficiently, ensuring accurate cooking times and temperatures. - Monitor and maintain food presentation standards. 3. Quality Control: - Ensure that dishes meet established quality and presentation standards. - Collaborate with the kitchen team to maintain consistency in the menu items. - Address any discrepancies or deviations from the recipes. 4. Station Organization: - Maintain a clean and organized station, following the principles of "clean as you go." - Keep ingredients and supplies well-stocked and easily accessible during service. - Properly label, date, and store food items to prevent spoilage and waste. 5. Safety and Hygiene: - Adhere to strict food safety and sanitation guidelines to ensure the safety of guests and kitchen staff. - Handle kitchen tools, equipment, and ingredients safely and responsibly. - Report equipment malfunctions or safety hazards to the senior chef. 6. Menu Innovation: - Collaborate with the culinary team to develop new menu items and dishes. - Contribute creative ideas and concepts for menu improvement. 7. Training and Development: - Assist in training and mentoring junior kitchen staff. - Share culinary knowledge and techniques to support the team's growth and improvement. **Qualifications**: - Culinary education or training from a culinary school or equivalent. - Previous experience in a Bulk Cooking or similar environment. - Strong culinary skills and knowledge of food safety regulations. - Proficiency in using kitchen equipment and tools. - Ability to work efficiently in a fast-paced kitchen. - Excellent communication and teamwork skills. **Working Conditions**: - Fast-paced and sometimes high-pressure kitchen environment. - Irregular hours, including evenings, weekends, and holidays. - Exposure to heat, steam, and kitchen noise.
