Job Summary:
**Responsibilities**:
- Kitchen Operations Management:
- Oversee day-to-day kitchen operations, including food preparation, cooking, and plating.
- Ensure compliance with food safety and sanitation standards, including HACCP guidelines.
- Monitor inventory levels of food supplies and kitchen equipment, and coordinate replenishment as needed.
- Maintain cleanliness and organization of the kitchen area, including workstations, storage areas, and equipment.
- Staff Supervision and Training:
- Supervise kitchen staff, including chefs, cooks, and kitchen assistants, and provide guidance and direction as needed.
- Delegate tasks and responsibilities to kitchen staff, ensuring efficient workflow and timely completion of duties.
- Conduct training sessions for new hires and ongoing training for existing staff to maintain high standards of food quality and service.
- Monitor staff performance and provide feedback, coaching, and disciplinary action as necessary.
- Menu Planning and Execution:
- Collaborate with the head chef or culinary team to plan and develop menus, including daily specials and seasonal offerings.
- Ensure consistent execution of menu items, adherence to recipes, and presentation standards.
- Monitor food quality and taste to identify opportunities for improvement and innovation.
- Quality Control and Food Safety:
- Conduct regular inspections of food preparation and storage areas to ensure compliance with food safety standards and regulations.
- Monitor food temperatures, cooking times, and portion sizes to maintain quality and consistency.
- Address any food safety concerns or violations promptly and take corrective action as needed.
- Cost Control and Budget Management:
- Monitor food costs, labor costs, and other expenses to ensure adherence to budgetary targets.
- Identify opportunities to reduce costs and improve efficiency without compromising quality.
- Implement portion control measures and waste reduction strategies to minimize food waste and maximize profitability.
- Communication and Collaboration:
- Communicate effectively with front-of-house staff, management, and suppliers to coordinate food orders, special requests, and inventory management.
- Collaborate with other departments, such as purchasing, maintenance, and event planning, to ensure smooth operations and customer satisfaction.
**Requirements**:
- Strong leadership and management skills, with the ability to motivate and inspire kitchen staff.
- Extensive knowledge of food preparation techniques, cooking methods, and kitchen equipment.
- Excellent communication and interpersonal skills.
- Ability to work well under pressure in a fast-paced environment.
- Understanding of food safety regulations and HACCP guidelines.
- Flexibility to work evenings, weekends, and holidays as needed.
