Job Summary

The Commis role requires a focus on quality, hygiene and safety standards contributing to an efficient high-quality kitchen environment.

Responsibilities:

  1. Evaluate incoming bakery orders to plan shift operations efficiently.
  2. Organize mise en place for current and next shifts.
  3. Coordinate with front-end and production teams to manage special/custom orders.
  4. Prepare Raw Material Indent Charts in coordination with the store.
  5. Plan delegate preparation tasks for the next shift ensuring seamless transitions.
  6. Create and manage duty rosters for staff assigned to the shift.
  7. Assist the Sous Chef overseeing daily bakery kitchen operations.
  8. Take charge of the bakery section in the absence of the Sous Chef ensuring workflow continuity.
  9. Maintain high levels of product quality consistency and hygiene at all times.
  10. Monitor personal and work hygiene standards complying with food safety norms.
  11. Complete order sheets and hand over detailed log reports to the next shift incharge.
  12. Standardize bakery products following recipes specifications and planning custom orders as per client requirements.
Requirements

Essential Skills and Qualifications:

  • Minimum 4-5 years of experience in a bakery or hotel kitchen environment with supervisory experience.
  • Certification Diploma in Bakery or Culinary Arts is preferred.
  • Strong knowledge of bakery production processes raw materials and food safety standards.
  • Ability to lead a team and manage operations independently.
  • Excellent planning communication and coordination skills.
  • Flexible to work in rotational shifts weekends and holidays.
  • Familiarity with HACCP and standard hygiene protocols.
