Job Title:

Culinary Team Member - Senior Kitchen Leader

Job Summary:

We are seeking an experienced and skilled culinary professional to join our kitchen team. As a key member of the culinary staff, you will be responsible for leading and directing direct reports, maintaining high standards of quality and consistency in food preparation, and ensuring that all public health regulations are met.

Main Responsibilities:

  • Directs, coaches, and evaluates direct reports to ensure excellent service and quality food production.
  • Maintains accurate records of recipes, inventory, and supplies, and ensures that all food is prepared according to established standards.
  • Coordinates and supervises team members assigned to their section, assigns tasks, and delegates responsibilities as needed.
  • Undertakes daily recipe reviews and maintains immaculate condition of recipe folders.
  • Responsible for follow-through on any request from direct supervisors or managers, including show plates, food samples, and random food tastings.
  • Monitors production levels, recommends ideas for improvements, and controls costs to maintain efficient operations.
  • Prepares electronic requisitions for section production and checks deliveries for accuracy; reports discrepancies to immediate supervisors.
  • Maintains area cleanliness, organization, and compliance with Public Health regulations.
  • Ensures correct execution of HACCP program and prepares areas for announced or unannounced United States Public Health inspections.
  • Reports for duty at assigned times, follows supervisor instructions, and maintains personal appearance, uniform, and hygiene according to established company rules and regulations.

Required Skills and Qualifications:

  • A minimum of 8 years of experience in upscale hotel, resort, cruise ship, or convention banqueting service, with at least 2 years as a senior kitchen leader (shipboard experience preferred).
  • A culinary school degree is required, along with strong management skills in a multicultural and dynamic environment.
  • Excellent communication, problem-solving, decision-making, and interpersonal skills, with superior customer service, teambuilding, and conflict resolution abilities.
  • Possess a good understanding of basic accounting principles and intermediate computer software skills.
