Job Title: Senior Culinary Operations Manager

Key Responsibilities:
  • DIRECTS AND SUPPORTS CULINARY TEAM MEMBERS BY PLANNING, COORDINATING, AND EVALUATING ALL ASPECTS OF FOOD PREPARATION AND PRODUCTION.
  • DEMONSTRATES EXPERTISE IN CULINARY TERMS AND PRACTICES.
  • Maintains the quality and consistency of prepared foods according to corporate instructions.
  • WORKS EFFICIENTLY AND PRODUCTIVELY TO COMPLETE TASKS AND RESPONSIBILITIES.
  • COREDICTOR AND SUPERVISOR OF ALL TEAM MEMBERS ASSIGNED TO THEIR SECTION, ASSIGN AND DELEGATE TASKS ACCORDINGLY.
  • UNDERTAKE DAILY RECIPE REVIEWS. Maintain recipe folders in immaculate condition.
  • RESPONSIBLE FOR FOLLOW-THROUGH ON ANY REQUEST WITHIN THE AREA OF RESPONSIBILITY RECEIVED FROM DIRECT SUPERVISOR OR MANAGER ON DUTY; THIS MAY INCLUDE SHOW PLATES, FOOD SAMPLES AND RANDOM FOOD TASTINGS.
  • CONTROLS PRODUCTION LEVELS AND RECOMMEND IDEAS FOR IMPROVEMENTS AND BETTER COST CONTROLLING.
  • PREPARE DAILY ELECTRONIC FOOD REQUISITIONS NEEDED FOR HIS SECTION PRODUCTION AND COUNTERCHECK DELIVERIES FOR ITS ACCURACY; REPORT ANY DISCREPANCIES TO IMMEDIATE SUPERVISOR.
  • OVERSEES MAIN SECTIONS (SAUCE, ENTREMETIER, FISH, ROAST, OUTLET CDP, TOURNANT AND COLD KITCHEN) AND THEIR ENTIRE FOOD PRODUCTION.
  • ENSURES PUBLIC HEALTH STANDARDS ARE FOLLOWED ACCORDING TO COMPANY EXPECTATIONS.
  • ENSURES HACCP PROGRAM IS CARRIED OUT CORRECTLY.
  • Maintain assigned area for announced or unannounced United States Public Health type inspection done by inspectors.
Requirements and Qualifications:
  • A minimum of 5 years of experience in upscale hotels, resorts, cruise ships or convention banqueting services with at least 2 years as a Senior Culinary Operations Manager.
  • Culinary school degree required.
  • STRONG MANAGEMENT SKILLS IN A MULTICULTURAL ENVIRONMENT.
  • EXCELLENT COMMUNICATION, PROBLEM SOLVING, DECISION MAKING, INTERPERSONAL SKILLS.
  • EXCELLENT CUSTOMER SERVICE, TEAM BUILDING, CONFLICT RESOLUTION SKILLS.
  • KNOWLEDGE OF PRINCIPLES AND PROCESSES FOR PROVIDING PERSONALIZED SERVICES.
  • PLANNING, COACHING, ORGANIZING, STAFFING, CONTROLLING, EVALUATING SKILLS.
  • INTERMEDIATE COMPUTER SOFTWARE SKILLS REQUIRED.
  • GOOD UNDERSTANDING OF BASIC ACCOUNTING PRINCIPLES.
  • ABILITY TO WRITE REPORTS AND BUSINESS CORRESPONDENCE.
