Job Overview

As a senior culinary leader, you will be responsible for directing and supervising a team of chefs in the kitchen. Your duties will include ensuring that all food is prepared to a high standard, managing inventory levels, and maintaining cleanliness and hygiene standards.

Key Responsibilities:
  • Directs, coaches, supports, supervises, and evaluates direct reports.
  • Maintains expert knowledge of food preparation and presentation techniques.
  • Responsible for maintaining recipe folders in immaculate condition.
  • Coordinates production levels and recommends ideas for improvements and better cost control.
  • Prepares daily electronic food requisitions needed for section production and counterchecks deliveries for accuracy.
  • Oversees main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and their entire food production.
  • Maintains adherence to Public Health standards and ensures HACCP program is carried out correctly.
  • Ensures assigned area is in preparation for announced or unannounced inspections.
Financial Management:
  • Responsible for cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment.
  • Identifies potential expense reductions through cost control.
  • Analyzes operational problems and establishes controls.
  • Reviews timesheets and forwards them to Executive Chef for approval.
  • Prepares various reports and letters utilizing personal computer system and equipment.
Motivational Leadership:
  • Monitors and manages workstation functions.
  • Monitors assignment of duties and responsibilities to staff.
  • Observes and evaluates staff and work procedures to ensure quality standards and service are met.
  • Makes recommendations regarding personnel actions such as new hire requests and discharges.
