Job Overview:

This is a dynamic and challenging role that requires the right candidate to thrive in our fast-paced kitchen environment.

The successful Line Cook will be responsible for preparing high-quality dishes, maintaining the cleanliness of their assigned area, and adhering to Public Health standards.

They will also be expected to work efficiently, productively, and effectively to meet the demands of the kitchen.

Key Responsibilities:

  • Prepare all basic food items for the menu as requested by their supervisor.
  • Possess advanced knife handling skills and be able to read, understand, follow, and prepare company recipes.
  • Be able to work in any section of the kitchen and maintain a good food knowledge and understanding of culinary terms.
  • Work efficiently and productively to complete tasks on time.
  • Always follow Public Health standards within their section and maintain their assigned area in preparation for announced or unannounced inspections.
  • Reports for duty at assigned times, follows their supervisor's instructions, and ensures personal appearance, uniform, and personal hygiene meet company rules and regulations.

Financial Responsibilities:

  • This position is responsible for cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment.

Qualifications and Education:

  • A minimum of 4 years in an upscale hotel, resort, cruise ship, or convention banqueting service and at least 2 years as Line Cook (shipboard experience preferred).
  • A culinary school degree is required and very strong management skills in a multicultural and dynamic environment are desired.
  • Very strong communication, problem-solving, decision-making, and people skills are essential for this role.
  • Superior customer service, teambuilding, and conflict resolution skills are also highly valued.
  • Knowledge of principles and processes for providing personalized services including needs assessment techniques, quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques is necessary.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills are also required.
  • Possess a good understanding of basic accounting principles such as numbering flow, debits/credits, adjusting entries, and corrections.
  • Ability to write reports and business correspondence and establish a good rapport with the ship's Senior Officers and the corporate office is essential.

  • Completion of at least one contract as Commis Cook with a performance rating of satisfactory or above, along with demonstrated leadership skills.
