
Culinary Operations Manager

The primary responsibility of a Sous Chef is to maintain an efficient operation by constantly analyzing quality and cost of food production.
Responsibilities:- Maintain set standards and monitor time management.
- Provide ongoing training and ensure that organizational standards are followed.
- Ensure safe, quality food products and complete guest satisfaction.
- Develop and comply with systems, procedures, rules, objectives and timescales set by the organization.
- Work within a technical/specialized area of expertise to improve the quality of service and product provided.
- Achieve set goals in a non-assertive and efficient manner.
- Conduct daily food tastings.
- Correct discrepancies immediately.
- Monitor and assist Section Heads to prepare electronic food requisitions according to forecasted figures.
- Monitor the Dinner Service Line to ensure smooth and efficient service, presentation and final plating.
- Monitor production and preparation levels using the Culinary Checklist.
- Maintain and ensure Public Health regulations are followed at all times.
- Advanced culinary skills, leadership, and experience.
- Minimum 8 years in the profession (Quality Hotels and Restaurants).
- Minimum 2 years of experience in a management role in a luxury hospitality establishment or upscale cruise line.
- Fluent written and spoken English.
- Communicate effectively with senior management.
- Possess ability to lead and make decisions.
- Good administrative skills.
- Experienced in coaching subordinates.
- Cost and quality conscious.
- Flexible work hours with ability to adapt to circumstances.
- Work with international team members.
- Perform assigned duties under pressure.
Key Responsibilities: Ensure compliance with public health regulations, monitor production levels, conduct daily food tastings, correct discrepancies, and maintain high crew morale.
