Job Summary:

We are seeking a highly skilled and experienced Executive Pastry Chef to join our team at AccorHotel. As a key member of our culinary team, you will be responsible for overseeing the production of high-quality pastries, bread, cakes, desserts, chocolates, and ice cream, ensuring that they meet our strict quality and presentation standards.

Key Responsibilities:

  • Supervise and coordinate the production of pastries, bread, cakes, desserts, chocolates, and ice cream, ensuring that they comply with our recipes and specifications.
  • Implement and promote our company's philosophy and values in your daily work, fostering a positive and collaborative team environment.
  • Prepare and maintain the required mise en place according to orders, ensuring that our kitchen is well-organized and efficient.
  • Prepare store requisitions for supervisors' approval and verify that received goods meet our quality and purchasing specifications.
  • Ensure the proper handling and storage of all semifinished and finished products to minimize spoilage and maintain our high standards.

  • Lead our Daily Taste Panel to ensure that our team and culinary knowledge are challenged daily to deliver exceptional experiences.
  • Create new types of pastries and desserts, preparing sample tastings to showcase our creativity and innovation.

Secondary Responsibilities:

  • Assist in inventory management as scheduled, ensuring that our stock levels are optimal and our kitchen is well-stocked.
  • Assist in creating banqueting menus, recipes, and costs, ensuring that our events are memorable and successful.
  • Follow our maintenance program and cleaning schedule, ensuring that our kitchen is clean and hygienic at all times.
  • Perform duties in other areas of the kitchen as assigned, demonstrating your flexibility and teamwork.
  • Work at off-premise functions, representing our brand and delivering exceptional experiences.
  • Attend designated meetings, staying informed and engaged with our team and stakeholders.
  • Participate and help organize cooking competitions, showcasing our creativity and innovation.

Qualifications:

  • Plated and dessert buffet experience, with a focus on creativity and presentation.
  • Bakery and chocolate experience, with a focus on quality and innovation.
  • Sugar work is a plus, with a focus on creativity and presentation.
  • European pastry skills, with a focus on tradition and innovation.
  • Luxury of 5-star experience is a must, with a focus on exceptional service and quality.
