  • Oversee the production of pastries, bread, cakes, desserts, chocolates, and ice cream to ensure they meet prescribed recipes and specifications.
  • Implement and promote the company's philosophy in daily work.
  • Prepare and check the mise en place according to orders.
  • Prepare store requisitions for supervisors' approval and verify that received goods meet quality and purchasing specifications.
  • Ensure proper handling of semifinished and finished products to minimize spoilage.
  • Monitor the handling and storage of produce to prevent spoilage.
  • Lead the Daily Taste Panel to challenge the FB team and culinary knowledge, ensuring a great experience.
  • Create new pastry and dessert types, preparing sample tastings.
Policies and Procedures
  • Ensure adequate staffing daily for smooth operations. Create and submit weekly staff rosters for Executive Chef approval and advise on recruitment and promotion of subordinates.
  • Take ownership and accountability for the outlet's profitability.
  • Prepare recipes for new items, costing, and verify cost analysis for each dish.
  • Prepare monthly duty rosters and manage Public Holidays and Annual Leave.
  • Prepare daily market lists after reviewing par stock and prepare requisition orders for Executive Chef approval.
  • Liaise with the Stewarding section to arrange cleaning and pest control schedules.
  • Assist Executive Chef in preparing operating budgets.
  • Maintain H.A.C.C.P programs where implemented.
  • Perform other related duties as assigned by the Executive Chef.
Secondary Functions
  • Assist in inventories as scheduled.
  • Assist in creating Banqueting menus, recipes, and costs.
  • Follow maintenance programs and cleaning schedules.
  • Perform duties in other kitchen areas as assigned.
  • Work on off-premise functions.
  • Attend designated meetings.
  • Participate in and help organize cooking competitions.
Qualifications
  • Plated and dessert buffet experience.
  • Bakery and chocolate experience.
  • Sugar work is a plus.
  • European pastry skills.
  • Luxury 5-star experience is a must.
