The ideal candidate for this role will be a highly skilled pastry chef with excellent leadership abilities. They will oversee daily operations, mentor junior staff, and ensure that every dish meets the highest standards of quality and consistency.

This is a key position in our culinary team, responsible for the production, quality, and presentation of the pastry and dessert assortment to be used in the daily menus.

Key Responsibilities:

  • Schedule Management: Ensure smooth and efficient operation and control of the Pastry Shop and production daily according to company policies.
  • Product Quality: Responsible for the production, quality, and presentation of the pastry and dessert assortment to be used in the daily menus.
  • Forecasting: Assist the Executive Pastry Chef in preparing production forecasts and recording leftovers to avoid unnecessary wastage.
  • Display Preparation: Assist in the set-up of the pastry display in the various buffets.
  • Health and Safety: Have a complete knowledge of the relevant health and safety regulations and ensure they are followed daily.
  • Cleaning and Maintenance: Ensure the cleaning of the Pastry Shop as per the schedule established by the Executive Pastry Chef and exercise proper methods to minimize equipment damage.
  • Inspections: Ensure that the pastry galley is ready for any announced or unannounced inspections.
  • Inventory Management: Responsible for the requisition and transportation of the necessary items from the main stores to the pastry shop when assigned.
  • Recipe Compliance: Ensure recipes and yields are in accordance with the company's standards.
  • Daily Consumption Reports: Assist the Executive Pastry Chef with the completion of the daily pastry consumption re-cap as requested.
  • Guest and Crew Interaction: Aware of and/or acquire the necessary knowledge to comply with the ship's standard operation and assist guests and crew members with inquiries.
  • Meetings and Training: Attend meetings, training activities, courses, and all other work-related activities as required.
