Key Responsibilities:

Kitchen Planning:

  • Coordinate the kitchen team to ensure efficient operations.
  • Implement menu plans as directed by the Executive Chef.
  • Maintain inventory levels and order supplies as needed.
  • Estimate daily and weekly requirements to optimize kitchen operations.

People Management:

  • Support the team to deliver excellent services.
  • Ensure team members are trained on safety protocols.
  • Motivate and develop the team to ensure smooth department functioning.
  • Prepare duty rosters to optimize team performance.
  • Maintain appropriate staffing levels to ensure excellent guest service.

Financial Management:

  • Monitor kitchen operations to minimize food waste.
  • Maximize employee productivity to reduce payroll costs.
  • Identify cost-effective resource use and educate the team.

Operational Management:

  • Supervise kitchen team facilities and costs to maximize profit.
  • Ensure food preparation and presentation meet standards.
  • Rearrange duties and rosters as needed to complete tasks efficiently.
  • Maintain company and statutory hygiene standards.
  • Responsible for producing high-quality food items.
  • Handle additional responsibilities as delegated by management.
  • Monitor and analyze:
    • Quality levels of production and presentation.
    • Guest satisfaction.
    • Operating food cost.
    • Cleanliness, Sanitation, and Hygiene.
  • Responsible for preparing menus under the Executive Sous Chef's supervision.
  • Ensure to maintain appropriate grooming standards, hygiene, and code of conduct.

Hygiene/Personal Safety/Environment:

  • Ensure a clean and tidy workplace and storage areas.
  • Respect HACCP regulations and safety guidelines.
  • Apply hotel security regulations.
  • Meet ISO 9001 quality certification requirements.
  • Respect the hotel's environmental commitments.
