Job Title: Junior Chef Assistant

Role Description:

The Commis role is a crucial position in the kitchen, responsible for preparing and cooking dishes with authenticity and consistency. As a key team member, you will be working closely with the culinary team to create exceptional dining experiences.

Responsibilities:
  • Prepare and cook dishes of assigned cuisine (South Indian/Chinese/Mughlai/Awadhi) with authenticity and consistency.
  • Manage mise-en-place and daily food preparation, ensuring timely completion of tasks.
  • Monitor portion control, plating standards, and maintain high levels of kitchen hygiene.
  • Train and supervise junior Commis in techniques, recipes, and kitchen safety protocols.
  • Collaborate with the inventory team to manage stock levels and assist with requisitions.
  • Maintain cleanliness and organization of the section, promoting a safe working environment.
Progression Levels:
  1. Commis I: Key Responsibilities include:
    • Prepare and cook dishes of assigned cuisine (South Indian/Chinese/Mughlai/Awadhi) with authenticity and consistency.
    • Manage mise-en-place and daily food preparation, ensuring timely completion of tasks.
    • Monitor portion control, plating standards, and maintain high levels of kitchen hygiene.
    • Train and supervise junior Commis in techniques, recipes, and kitchen safety protocols.
    • Collaborate with the inventory team to manage stock levels and assist with requisitions.
    • Maintain cleanliness and organization of the section, promoting a safe working environment.
  2. Commis II: Assist in preparing ingredients, basic sauces, and garnishes, while maintaining high levels of quality control. Ensure mise-en-place is ready for service and report any issues to senior staff members.
  3. Commis III: Wash, peel, chop, and store ingredients, while maintaining accurate records of stock levels. Assist with mise-en-place and stock rotation, adhering to established procedures.
