Job Summary

Key Responsibilities

  1. Directs, coaches, supports, supervises, and evaluates kitchen staff to ensure high-quality dishes are prepared efficiently.
  2. Maintains expert knowledge of culinary terms, recipes, and cooking techniques to prepare menus that meet company standards.
  3. Ensures accurate and timely ordering of ingredients and supplies to maintain efficient kitchen operations.
  4. Coordinates and supervises team members to guarantee smooth section operations and excellent teamwork.
  5. Monitors inventory levels, recommends improvements, and ensures effective cost control measures are implemented.
  6. Collaborates with the Sous Chef to oversee kitchen operations, including food preparation, presentation, and plating.
  7. Participates in recipe reviews daily, maintaining folders in impeccable condition and adhering to health and safety regulations.
  8. Responds promptly to requests from direct supervisors or managers on duty, ensuring seamless communication and execution.
  9. Conducts workstation spot checks to prevent waste and deterioration, maintaining exceptional storehouse conditions.

Financial Management

  • Manages records, reports, supplies, and equipment to minimize expenses and optimize resources.
  • Analyzes operational problems and implements corrective measures to improve efficiency and productivity.
  • Reviews timesheets and forwards them to the Executive Chef for approval, ensuring timely and accurate submissions.
  • Prepares various reports and letters using personal computer systems and equipment, fostering effective communication and record-keeping.

Qualifications and Education

  • A minimum of 8 years' experience in upscale hotels, resorts, cruise ships, or convention banqueting services, with at least 2 years as a Chef de Partie (shipboard experience preferred).
  • Requires a culinary school degree and strong management skills in multicultural and dynamic environments.
  • Develops and maintains exceptional interpersonal, problem-solving, decision-making, and communication skills.
  • Expertly handles diverse tasks, such as workload management, team coordination, and conflict resolution.
