Job Description

Job Title: Commis I - Food Preparation Specialist

Department: Food and Beverage

Reports to: Sous Chef Executive Chef or Chef de Partie

Key Responsibilities:
  1. Assist in food preparation and perform related duties in the kitchen.
  2. Responsible for the work assigned by Sous Chef Executive Chef or Chef de Partie in any section of the kitchen as per the standards.
  3. Perform miscellaneous job-related duties as assigned.
  4. Ensure to follow HACCP procedures and keep clear records at all times.
  5. Exceed guest expectations in quality and service of food products.
  6. Bring any matter affecting the interests of the hotel to the attention of the Management.
  7. Provide effective support to the team to enable them to provide a range of effective and efficient services.
  8. Ensure to exceed guest expectations in quality and service of food products.
  9. Cooperate with staff in each section as assigned by the Executive Chef to ensure the proper use of equipment and efficient completion of all tasks.
  10. Maintain personal grooming and hygiene to ensure standards are maintained.
  11. Liaise with the Catering and Stewarding Departments in a professional manner to ensure event objectives are achieved and standards are maintained at all times.
  12. Identify optimal and cost-effective use of resources.
  13. Facilitate the stock take and stock rotation for the assigned section.
  14. Monitor the operation to ensure that food wastage is minimized and to maintain cost-effectiveness and profitability in all areas.
  15. Adhere to all recipes, methods, and instructions from the Executive Chef/Sous Chef.
  16. Ensure that company and statutory hygiene standards are maintained.
  17. Ensure that the preparation and presentation of food comply with the standards.
  18. Responsible for the production, preparation, and presentation of all food items in the assigned function to ensure the highest quality at all times.
  19. Ensure to maintain appropriate grooming standards, hygiene, and code of conduct.
  20. Coordinate operations with Department Coordinators Supervisors and other Departmental Managers to ensure operational readiness, efficiency in resource utilization, and the prompt delivery of services.
  21. Ensure to prevent the use of contaminated products in any process of food preparation.
  22. To ensure that the assigned kitchen areas, equipment, and utensils are always kept as per the standards.
  23. Adhere to Mercure Ekana Sportz City Lucknow policies and procedures at all times.
  24. Handle additional responsibilities as and when delegated by the Management.
