Job Title: Chinese Cuisine Specialist

We are seeking a highly skilled and experienced Chef de Partie - Chinese to oversee the preparation and presentation of high-quality Chinese dishes. The ideal candidate will have expertise in Chinese cooking techniques, strong leadership skills, and the ability to train and supervise junior kitchen staff.

Key Responsibilities:
  • Manage the Chinese section of the kitchen and ensure all dishes are prepared according to authentic techniques and recipes.
  • Cook and present Chinese dishes including stir-fries, dim sum, noodles, fried rice, steamed items, and sauces.
  • Supervise and guide Commis chefs and kitchen assistants in the Chinese section.
  • Ensure food is prepared and served on time, especially during busy service hours.
  • Maintain the highest standards of hygiene, cleanliness, and food safety.
  • Monitor portion and waste control to maintain food cost targets.
  • Collaborate with the Sous Chef in planning menus, developing new Chinese dishes, and improving existing recipes.
  • Ensure all mise-en-place is prepared before service.
  • Take responsibility for the proper maintenance and functioning of kitchen equipment in the Chinese section.
  • Check stock levels and communicate requirements to the store or Sous Chef.

  • Expertise in Chinese cooking techniques.
  • Strong leadership skills.
  • Ability to train and supervise junior kitchen staff.
  • Knowledge of kitchen operations and management.
  • Familiarity with menu planning and development.
