Job Title: Executive Chef Assistant

The key role of the Sous Chef is to maintain a productive kitchen environment by continuously monitoring and improving food quality and production processes.

Key Responsibilities:

  • Develop strategies for efficient time management and ensure adherence to culinary standards.
  • Provide regular training and guidance to team members, ensuring they adhere to company protocols.
  • Ensure the provision of high-quality safe food products and strive for exceptional guest satisfaction.
  • Establish and implement effective systems, procedures, rules, objectives, and timelines as set by the organization.
  • Contribute to the improvement of service and product quality within a technical/specialized area.
  • Adopt a helpful and approachable demeanor.
  • Accept established objectives and work within agreed parameters.
  • Mentor, counsel, coach, and support colleagues to enhance their morale and self-esteem.
  • Promote a positive and inclusive crew culture and ensure fair treatment of all team members.
  • Ensure strict adherence to menus, recipes, methods, and operational specifics provided by the organization.
  • Seek guidance and authority when necessary.
  • Achieve set goals in a non-assertive and efficient manner.
  • Conduct daily food tastings and address discrepancies promptly.
  • Assist Section Heads in preparing electronic food requisitions.
  • Monitor production and preparation levels using the Culinary Checklist.
  • Comply with Public Health regulations at all times.

Requirements:

  • Advanced culinary skills, leadership abilities, and experience.
  • Minimum 8 years of experience in the culinary industry (quality hotels and restaurants).
  • Minimum 2 years of experience in a management role in a luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English.
  • Effective communication with senior management.
  • Ability to lead and make informed decisions.
  • Good administrative skills.
  • Experience coaching and mentoring colleagues.
  • Cost and quality awareness.
  • Flexibility to adapt to changing circumstances.
  • International collaboration and teamwork.
  • Ability to perform duties under pressure.

Preferred Skills:

  • Cruise Ship Experience or 5-star Hotel experience.
  • Additional language fluency.
