Sous Chef

Job Description:

The primary responsibility of this role is to maintain a high-performance kitchen by analyzing and optimizing food production quality and cost.

Key responsibilities include:

  • Maintaining efficiency in all aspects of food production.
  • Providing ongoing training and ensuring that high standards are followed.
  • Ensuring safe, quality food products and exceeding guest satisfaction expectations.
  • Developing and implementing systems, procedures, rules, objectives, and timescales set by the organization.
  • Working within a technical/specialized area of expertise to improve service and product quality.
  • Adopting an accommodating and helpful manner when interacting with colleagues and guests.
  • Accepting objectives set by others and working within agreed parameters to ensure tasks are completed.
  • Mentoring, counseling, coaching, and supporting subordinates to boost morale and personal esteem.
  • Maintaining a positive and fair work environment, promoting team cohesion and a positive atmosphere.
  • Ensuring full adherence to menus, recipes, methods, and operational specifics provided by the organization.
  • Seeking direction and authority from others when appropriate.
  • Achieving set goals in a non-assertive and efficient manner.
  • Conducting daily food tastings and correcting discrepancies immediately.
  • Monitoring and assisting Section Heads to prepare electronic requisitions according to forecasted figures.
  • Ensuring smooth and efficient service, presentation, and final plating during dinner service.
  • Monitoring production and preparation levels using the Culinary Checklist.
  • Maintaining compliance with Public Health regulations (US, Anvisa, Shipsan, Canadian, Australian, etc.) at all times.

Qualifications and Skills:

  • Advanced culinary skills, leadership experience, and a strong track record in the profession.
  • Minimum 8 years of experience in Quality Hotels and Restaurants.
  • Minimum 2 years of experience in a management role in a luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English language skills.
  • Effective communication with senior management.
  • Ability to lead and make informed decisions.
  • Good administrative skills.
  • Experience in coaching subordinates.
  • Cost and quality consciousness.
  • Flexibility with scheduled work hours.
  • Ability to work effectively with international team members.
  • Perform assigned duties under pressure.

Preferred Qualifications:

  • Cruise Ship Experience or 5-star Hotel background.
  • Fluency in additional languages.
