Job Title: Senior Culinary Operations Manager

This position involves overseeing the entire food production process, from planning to execution.

Main Responsibilities:

  • The successful candidate will be responsible for maintaining high-quality standards and consistency in taste across all menu items.
  • They will also be expected to coordinate team members assigned to their section, delegate tasks accordingly, and ensure that all work is completed efficiently.
  • An additional responsibility will be to control production levels, recommend ideas for improvements, and implement cost-controlling measures.
  • Furthermore, they will maintain electronic food requisitions needed for their section's production and verify deliveries for accuracy.
  • They will oversee the main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and entire food production.

Financial Responsibilities:

  • Cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment is essential.
  • The role requires identifying potential expense reductions through effective cost control.
  • Additionally, operational problems will need to be analyzed and controls established.
  • The person in this position will also review timesheets and forward them to the Executive Chef for approval.

Motivational Responsibilities:

  • Monitoring and managing workstation functions are crucial.
  • Ongoing evaluation of staff and work procedures ensures quality standards and service are met.

Qualifications and Education:

  • A minimum of 5 years of experience in an upscale hotel, resort, cruise ship, or convention banqueting service, with at least 2 years as a Senior Culinary Operations Manager (shipboard experience preferred).
  • A culinary school degree is required.
  • Strong management skills in a multicultural and dynamic environment are necessary.
