Job Title: Industrial Bakery Production Lead

Lead end-to-end factory operations across multiple shifts, managing teams to deliver safe, high-quality output at optimal cost.

Key Responsibilities:

  • Develop daily/weekly/monthly production planning, scheduling, and on-time execution across shifts.
  • Drive efficiency, yield, and Overall Equipment Effectiveness (OEE); reduce waste and downtime through process improvements.
  • Implement Standard Operating Procedures (SOPs), recipes, and specifications; resolve floor issues quickly.
  • Plan Raw Material/Packaging requirements with Procurement; maintain optimal inventories (FIFO, freshness).
  • Oversee manpower allocation, rosters, and overtime; partner with Human Resources on hiring and staffing.
  • Lead factory trials and scale-up for new products from pilot to full production.
  • Ensure Food Safety and Standards Authority of India (FSSAI), Hazard Analysis and Critical Control Points (HACCP), Good Manufacturing Practices (GMP), hygiene, and safety compliance at all times.
  • Track and report Key Performance Indicators (KPIs) (volume, OEE, yield, waste, productivity); analyze trends and implement improvements.

Requirements:

  • Bakery/Pastry Chef, Food Technology or Engineering degree.
  • 10+ years in production/plant leadership within bread/bakery/confectionery.
  • Proven multi-shift management and supervisor leadership experience.
  • Deep knowledge of bakery processes, equipment, and ingredients.
  • Strong command of production planning, inventory control, and process improvement tools.
  • Working knowledge of FSSAI, HACCP, and related food-safety protocols.

  • Process-driven and data-led; improves systems and SOPs continuously.
  • Clear communicator with management, supervisors, and operators.
  • Languages: Tamil and Hindi preferred.
