Culinary experts are sought after to assume a leading role in our culinary team. In this capacity, daily operations will be overseen, junior staff will be mentored, and every dish must meet the highest standards of quality and consistency.

Key Responsibilities:

  • The smooth operation and control of the Pastry Shop and production on a daily basis must be maintained according to established company policies.
  • Pastries and desserts must be produced, inspected, and presented according to the requirements for daily menus.
  • Production forecasts must be prepared, leftovers must be recorded, and unnecessary wastage must be avoided to keep food costs under control.
  • The pastry display in the various buffets must be set up.
  • Maintain complete knowledge of United States Public Health rules and regulations and ensure they are followed on a daily basis.
  • The Pastry Shop must be cleaned as per the schedule established by the Executive Pastry Chef and proper methods must be exercised to minimize equipment damage.
  • The pastry galley must be prioritized for any announced or unannounced USPH inspections.
  • Necessary items from main stores must be requisitioned and transported to the pastry shop when assigned.
  • Recipes and yields must be evaluated against company standards.
  • Collaborate with CDP Pastry on completing the daily pastry consumption recap.
  • Engage with guests and crew members to answer inquiries.
  • Attend meetings, training activities, courses and all other work-related activities as required.

Qualifications and Education:

  • A minimum of three years' experience as a Pastry Cook in an upscale hotel, resort, cruise ship or convention banqueting service (shipboard experience preferred).
  • Knowledge of proper cleaning techniques, requirements, and use of equipment.
  • Completion of high school or basic education equivalency requirement.
