Job Description

This role requires a skilled professional to lead and support the culinary team.

Key Responsibilities
  • Directing, coaching, supporting, supervising, and evaluating direct reports with the Sous Chef.
  • Holding excellent food knowledge and a full understanding of culinary terms.
  • Reading, understanding, following, and preparing company recipes by maintaining quality and consistency in taste according to corporate instructions.
  • Completing tasks efficiently and productively.
  • Working in any section of the kitchen.
  • Coordinating and supervising team members assigned to their section, assigning and delegating tasks accordingly.
  • Undertaking daily recipe reviews and maintaining immaculate condition of recipe folders.
  • Following through on requests from direct supervisors or managers on duty, including show plates, food samples, and random food tastings.
  • Controlling production levels and recommending ideas for improvements and better cost controlling.
  • Preparing daily electronic food requisitions needed for section production and counterchecking deliveries for accuracy, reporting discrepancies to immediate supervisors.
  • Oversighting main sections (Sauce, Entremetier, Fish, Roast, Outlet CDP, Tournant, and Cold Kitchen) and entire food production.
Financial Responsibilities

This position is responsible for cost containment through proper use, handling, and maintenance of records, reports, supplies, and equipment.

Identifying potential expense reductions through cost control.

Analyzing operational problems and establishing controls.

Reviewing timesheets and forwarding them to the Executive Chef for approval.

Preparing various reports and letters utilizing personal computer system and equipment.

Ensuring items are requisitioned in correct quantities, within acceptable timeframes, and in accordance with established control procedures.

Conducting workstation spot checks to ensure items are correctly stored to minimize deterioration and waste.

Motivational Responsibilities

Monitoring and managing assigned workstation functions.

Monitoring assignment of duties and responsibilities to staff.

Observing and evaluating staff and work procedures to ensure quality standards and service are met.

Making recommendations regarding personnel actions such as new hire requests and discharges to ensure adequate and continuous staffing.

Inspecting workstations, work areas, equipment, etc. to ensure efficient service and conformance to standards.
