Lead Meat Production Manager

About the Role:

This position is responsible for overseeing the smooth operation of a meat production facility, ensuring that all products meet company standards. The ideal candidate will have excellent leadership and communication skills, as well as experience in managing a team in a fast-paced environment.

Main Responsibilities:
  • Develop and implement efficient production processes to minimize waste and maximize productivity.
  • Direct and supervise direct reports, including evaluating their performance and providing coaching and feedback.
  • Maintain knowledge of quality control procedures and ensure that all products meet company standards.
  • Clean and maintain the production area and equipment, exercising proper methods to minimize damage.
  • Prepare workstations and areas for inspections and audits.
  • Manage inventory and requisitioning of necessary items, including freezers and thawing rooms.
  • Monitor product yields and portions, adhering to company guidelines.
  • Complete daily production reports and recaps as required.
Financial Responsibilities:
  • Implement cost containment measures through proper use of resources and supplies.
  • Analyze operational problems and establish controls to minimize losses.
  • Review timesheets and forward them to management for approval.
  • Requisition items in correct quantities within acceptable timeframes and according to established control procedures.
Qualifications and Skills:
  • Minimum two years' experience as a meat production manager in an upscale hotel or resort (shipboard experience preferred).
  • Culinary school degree required.
  • Strong leadership and communication skills, with experience in managing a team in a fast-paced environment.
  • Excellent problem-solving and decision-making skills, with the ability to analyze complex data and make informed decisions.
  • Intermediate computer software skills, with experience in using spreadsheets and databases.
  • Able to work independently and as part of a team, with a strong focus on customer satisfaction.
  • Knowledge of quality control procedures and company policies.
  • Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
