Job Role:

A high-level butcher shop management position responsible for overseeing daily operations, staff supervision, and meat preparation.

Key Responsibilities
  • Day-to-Day Operations: Manage the efficient control and adherence to company policies in the butcher shop.
  • Staff Supervision: Direct and supervise staff members, providing guidance, coaching, and evaluations for optimal performance.
  • Meat Preparation: Responsible for thawing, butchering, and preparing meat and poultry for daily menus.
  • Cleanliness: Maintain a thorough understanding of US Public Health Rules and Regulations, implementing them consistently, and ensure the cleanliness of the butcher shop and thawing rooms.
Additional Tasks
  • Inventory Management: Manage inventory, storing received meats and poultry in freezers on loading days.
  • Transportation: Coordinate transportation of items from freezers to thawing rooms according to executive chef's schedule.
  • Product Optimization: Optimize product yields and portions as per corporate-provided Butcher Manual.
  • Trim Disposal: Dispose of trimmings efficiently or utilize them as required.
  • Daily Recaps: Complete daily butcher recaps as requested by the executive chef.
  • Collaboration: Collaborate with the inventory manager on taking inventory of storage rooms.
  • Personnel Management: Ensure personnel arrive on time, dressed in proper uniforms, and maintain personal appearance and hygiene according to company policy.
  • USPH Inspections: Be present during early standbys for USPH inspections.
  • Customer Service: Assist guests and crew members with inquiries and attend meetings/training activities as needed.
Financial Responsibilities
  • Cost Control: Control costs through proper use, handling, and maintenance of records, reports, supplies, and equipment.
  • Expense Reduction: Identify potential expense reductions through cost control.
  • Operational Analysis: Analyze operational problems, establish controls, review timesheets, and forward them for approval.
  • Reporting: Prepare various reports and letters using personal computer systems.
  • Requisitioning: Requisition items in correct quantities within acceptable timeframes, following established control procedures.
Required Skills and Qualifications
  • Experience: Minimum two years' experience as Head Butcher in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
  • Culinary Education: Culinary school degree required.
  • Management Skills: Strong management skills in multicultural environments.
  • Communication: Excellent communication, problem-solving, decision-making, and interpersonal skills.
  • Customer Service: Superior customer service, teambuilding, conflict resolution, and planning skills.
  • Needs Assessment: Knowledge of personalized services, including needs assessment techniques, quality service standards, and guest satisfaction evaluation techniques.
  • Computer Skills: Strong planning, coaching, organizing, staffing, controlling, evaluating, and intermediate computer software skills.
  • Accounting: Good understanding of basic accounting principles, report writing, and business correspondence.
  • Rapport Building: Able to establish good rapport with senior officers and corporate office.
