About the Role

The primary responsibility of this position is to maintain an efficient operation by constantly analyzing quality and cost of food production.

  • Maintain set standards and monitor time management.
  • Provide ongoing training and ensure that the organization's standards are followed.
  • Ensure safe, quality food products and complete guest satisfaction.
  • Develop and comply with systems, procedures, rules, objectives, and timescales set by the organization.
  • Improve the quality of the service and product provided within a technical/specialized area of expertise.
  • Avoid conflict and adopt an accommodating manner.
  • Work within agreed parameters to ensure tasks are complete.
  • Mentor, counsel, and coach subordinates to boost morale and personal esteem.
  • Maintain high crew morale and treat all crew members fairly and unbiasedly.
  • Ensure full adherence to menus, recipes, methods, and operational specifics.
  • Seek direction from others when appropriate.
  • Achieve set goals in a non-assertive and efficient manner.
  • Conduct daily food tastings and correct discrepancies immediately.
  • Monitor electronic food requisitions and assist Section Heads to prepare them according to forecasted figures.
  • Monitor Dinner Service Lines for smooth and efficient service, presentation, and final plating.
  • Use Culinary Checklists to monitor production and preparation levels.
  • FOLLOW Public Health regulations at all times.
Qualifications
  • Advanced culinary skills, leadership, and experience.
  • 8 years in the profession (Quality Hotels and Restaurants).
  • Minimum 2 years in a management role in a luxury hospitality establishment or upscale cruise line.
  • Fluent written and spoken English.
  • Effective communication with senior management.
  • Ability to lead and make decisions.
  • Good administrative skills.
  • Experience coaching subordinates.
  • Cost and quality consciousness.
  • Flexibility during scheduled work hours if circumstances require it.
  • International team collaboration.
  • Perform duties under pressure.
